The birth of the Antica Cantina di Monserrato

Set up by 79 local wine-growers who decided to pool their experience, work and products with the aim of highlighting their participation in the agricultural and productive economy of the entire region.

They had a clear understanding of social consciousness and the principles of good governance in the production of wine, aimed at protecting the wine trade against any type of fraud, while guaranteeing excellent quality through careful processing of the grapes.
1956 - 1962
Expansion of the winery

The Cantina di Monserrato was one of the few cooperatives that survived the period of wartime crisis and was able to continue all the activities of supplying grapes and processing large quantities of wine through the availability of good machinery and a skilled workforce.

The continuing growth in the wine market led to an enormous increase in the cooperative’s members’ contributions in 1959 with 116,692 quintals, and in 1962 with 139,791 quintals at the facilities located in Monserrato, Ussana, Sestu and Capoterra.
2009
Export of bulk wine

From the beginning, the white wines (Nuragus) and red wines (Girò, Bovale, Barbera and Monica) were exported to Lazio and Tuscany, and later, to Veneto, Piedmont, Lombardy, Emilia Romagna, and even to France.

Until 2009, the cooperative’s focus remained the sale of bulk wine in tanks to European countries, especially Germany, which had also become producers in the meantime.
2011
The advent of the Cantine Pauli’s brand

This was followed by the conquest of the consumer bottled wine markets, establishing a new sales organization in the winery with investments in technology aimed at modernizing the processing of grapes, must and wine until 2011, the year in which the new “Cantine Pauli’s” brand was created.

Centenary

The Cantina Sociale di Monserrato is the first social winery in Sardinia to turn 100 on 6 July 2024.

Stores

We are now organized throughout the region and in Italy, and we also have importers and distributors in various countries in the rest of the world.

We are still the winery of the people, not just those in the Monserrato district, but throughout the area, with 3 stores covering Monserrato, Cagliari and Quartu Sant’Elena, where all the wines we produce are sold in bottles or in bulk.

The Winery

Our main site is in Via Giulio Cesare 2, in Monserrato.

This is where the offices, storage and bottling facilities, warehouse and store are located.

Our vineyards are spread out in the districts of Sestu, Pimentel, Ussana, Selargius, Serdiana, and Monserrato.

The grape collection center for our members is located in Ussana where the freshly harvested grapes are collected, selected, weighed and prepared for the wine-making process. They are then taken to the Monserrato site for packaging.

Our wine is sold in several sales outlets known as Paulishops, in addition to the Monserrato store.

The Terroir

This is a French term that refers to both the concept and character, flavour and characteristics of a wine that are significantly influenced by the place in which the grapes are grown.

It reflects all the specific geographical, climatic and agricultural influences of a wine-growing region.

The quality of the wine begins first in the vine and then in the winery

Soil

The type of soil in which our vines grow has a direct impact on the grapes. The different types of soil can, in fact, give the wine different mineral properties. The wild vegetation gives our grapes a unique flavour.

Climate

The Mediterranean climate influences the ripening of the grapes and their chemical composition.

Grape varieties

The type of grape cultivated in a specific region plays a fundamental role. Our grape varieties are: Cannonau, Monica, Nuragus, Moscato, Vermentino and Nasco.
